Roasted beetroot, feta and rocket on Sourdough

Ingredients

  • 2 roasted beetroots
  • 1/2 cup of crumbled, good quality feta
  • 2 slices of sourdough
  • 2 handfuls of rocket
  • A drizzle of honey
  • 2 sprigs of time
  • 2 tbsp olive oil and a little extra for brushing on the toast
  • 1 garlic clove
  • 1 tbsp fresh lemon juice

Roasted beetroot, feta and rocket on Sourdough is a simple, quick and healthy lunch full of ingredients to make your skin glow. This recipe makes enough for 2.

Method

  1. Brush the bread with olive oil and toast on a griddle pan (flipping over half way through). When the bread has griddle lines on both sides, peel and cut in half the garlic and rub on each side of the toast

  2. Mix together the olive oil, lemon juice and thyme leaves and season with salt and pepper

  3. Cut the beets into small chunks and add to the dressing along with the rocket, and give them a good mix around.

  4. Assemble the beets and rocket on each piece of toast, and add the crumbled feta

  5. Finally, drizzle a very small amount of honey over each toast and serve immediately
