Beetroot, feta and rocket mini frittatas

beetroot feta rocket frittataBrighten up even the dullest of winter days with these delicious little frittatas which make a perfect protein rich snack or light lunch.

Aside from being great sources of protein, eggs are packed full of vitamins and minerals, and a good source of Selenium, which protects cells from damage, helps skin fight infection and tempers inflammation caused by UV light, stress and other factors known to age skin, contributing to the breakdown of collagen.

Beetroot is a very rich source of Vitamin C which is a vital nutrient for good skin health. Vitamin C is needed for the production of collagen, the skin’s natural plumping agent. It is also said to promote healing. The feta is another great source of protein is needed in every cell in the body to build and repair tissue, so it is a key ingredient for a healthy looking face. Rocket provides vitamins A, C and K. Vitamin K is a little known powerhouse for skin, protecting against the signs of premature ageing.

Ingredients:
4 eggs
1/3 block feta crumbled
1/4 bag rocket
1 and a half cooked beetroots (from salad isle), small cubed
Roughly half of a small red onion diced very small

Method:

Preheat the oven 190°C fan. Line a muffin tray with little squares of grease proof paper. Whisk up the eggs and add all the remaining ingredients. Season with salt and pepper. Cook for about 12 minutes, until the frittatas have risen and are no longer wobbly. Be careful not to overcook or hte frittatas will become rubbery!
