Simple Hake in a Bag with Zucchini Ribbons…

This deliciously simple, fresh summer recipe is brought to you by healthy eating expert and Nutritional Therapist Amelia Freer – her recipes are always gorgeous – a feast for both the eyes and the tastebuds! This particular recipe has become a summer favourite in our households because it is just so simple to make, yet looks sufficiently ‘efforty’ if serving it up to friends for dinner! 

Nutritional Benefits: Hake is a rich source of Vitamin B12, known to support skin health and Courgettes are packed with moisture and skin-friendly vitamins (A, E and C) that help lift sagging areas, alleviate puffiness, build collagen and fight damage from free radicals.

INGREDIENTS

2 fillets of hake
spinach
yellow or green courgette / zucchini ribbons (made with a spiralizer )
spring onions
chilli
basil
parsley
1 x lime, 1 x lemon
olive oil
salt & pepper

STEP-BY-STEP

Wrap it all up in a “bag” of parchment paper and bake in the oven on a medium heat for 10-15 mins until cooked.
